Vegan Oat Cookies

Easy Vegan Oat Cookies 🍪😋

I love making those cookies because they are easy and I love spreading some chocolate nut butter on top, making ice cream sandwiches or just eat them as is. Good for snacks or desserts!

Makes 10 big cookies:
🍪3 ripe bananas 🍌 (mashed);
🍪1/4 cup almond butter;
🍪1/4 cup molasses or maple syrup;
🍪1 Tbsp coconut oil;
🍪2 1/4 cups oats, plus more if needed;
🍪1/4 tsp sea salt;
🍪1/2 tsp vanilla extract;
🍪Pinch of cinnamon;

🥣Mix all ingredients in a bowl until a stick mix forms. If is too creamy add a bit more oats until you can get in your hands and shape it into cookies.
Bake it on parchment paper lightly greased in 350F for about 20min. They should turn golden brown.
Remove the cookies and let them cool before serving. Store in a airtight container!

🍪3 Bananas bem maduras (amassada);
🍪4 Colheres Sopa de manteiga de amêndoas;
🍪4 Colheres Sopa de Melaço;
🍪1 Colher Sopa de óleo de coco 🥥;
🍪2 1/4 copos de aveia (um pouco mais se precisar);
🍪Pitada de sal marinho;
🍪Pitada de canela em pó;
🍪1/2 Colher de chá de extrato de baunilha;

🥣Misture todos os ingredientes até formar uma massa grudenta, se ficar muito mole acrescente um pouco mais de aveia. Faça em torno de 10 bolachas grandes e coloque numa assadeira com papel pergaminho e levemente untada com óleo de coco. Asse em torno de 20 min ou até as bolachas fiquem douradas. Retire do fogo e deixe esfriar antes de servir. Guarde num recipiente hermético.
