Raw Vegan Cherry Cheesecake

About this 4th of July. Well, Iโ€™m still improving my skills on how to decorate and take beautiful pictures of my vegan cheesecakes. I tried soooo many positions and ways to take a picture of my cheesecake that it was probably funny to watch me if youโ€™d be around. Lights, and angles… I really wish for a nice studio light in my dream kitchen! Lol ๐Ÿ˜… But, other than me trying to decorate the cheesecake and trying to make the pictures look good, it came out really tasty! ๐Ÿ˜‹ Now I’m having cheesecake everyday for breakfast! Considering that it only has healthy ingredients like nuts, coconut, oats and fruits, itโ€™s like a smoothie bowl right? ๐Ÿ˜๐Ÿ˜œ๐Ÿฅฅ๐Ÿ’๐ŸŒ๐Ÿฐ๐Ÿฅฃ

๐Ÿ’RAW VEGAN CHERRY CHEESECAKE:
๐ŸฐBASE:
๐Ÿ’1 cup almonds;
๐Ÿ’3/4 cup oats;
๐Ÿ’1 cup dates;
๐Ÿ’1 Tbsp coconut oil;
๐Ÿ’1-2 tsp water;
๐Ÿ’Pinch sea salt;
๐Ÿ‘‰๐ŸผBlend all ingredients until a dough forms. Add 1tsp of water at a time until the dough comes out sticky and easy to be held together.
๐Ÿ‘‰๐ŸผPress firmly into a pie dish.
๐ŸฐWHITE LAYER:
๐Ÿ’1 cup raw cashews, soaked;
๐Ÿ’1/3 cup cacao butter, melted;
๐Ÿ’1/2 cup coconut milk;
๐Ÿ’1/4 cup maple syrup;
๐Ÿ’Juice of 1 lemon (4 Tbsp);
๐Ÿ’1/4 cup protein powder (optional + more coconut milk if using protein);
๐Ÿ‘‰๐ŸผDrain the cashews and blend with all ingredients until very smooth.
๐Ÿ‘‰๐ŸผPour on top of the base.
๐Ÿ‘‰๐ŸผFreeze for a couple of minutes until set.
๐ŸฐCHERRY LAYER:
๐Ÿ’1 cup raw cashews, soaked;
๐Ÿ’1/4 cup coconut milk (a bit more if needed to help blend);
๐Ÿ’1 banana, frozen;
๐Ÿ’1 cup cherries, frozen;
๐Ÿ’1 Tbsp maple syrup;
๐Ÿ’1/4 cup cacao butter, melted;
๐Ÿ’2 Tbsp coconut oil;
๐Ÿ’1 scoop vegan collagen (optional);๐Ÿ‘‰๐ŸผDrain the cashews and blend with all ingredients except the frozen fruits until very smooth.
๐Ÿ‘‰๐ŸผAdd the fruits and blend again.
๐Ÿ‘‰๐ŸผPour on top of the white layer.
๐Ÿ‘‰๐ŸผFreeze again for one hour or so until set. Then leave in the refrigerator until firm.

๐ŸฐCHERRY SAUCE:
๐Ÿ’1 cup cherries;
๐Ÿ’1 tsp chia seeds;
๐Ÿ’1 tsp maple syrup;
๐Ÿ’Splash water;
๐Ÿ‘‰๐ŸผCook over low heat for approx 10min. Allow to cool;
๐Ÿ‘‰๐ŸผWhen itโ€™s ready, serve with the cherry sauce.
